Course Overview

The Certificate III in Commercial Cookery (SIT30821) equips students with the essential skills and knowledge required to work as a qualified cook in Australia’s thriving hospitality industry. 

 

This nationally recognised qualification focuses on food preparation, kitchen operations, menu planning, food safety, and catering to a variety of dietary requirements. You will learn to work with independence and judgement, applying well-developed cookery skills under the guidance of workplace policies and procedures. 

 

Graduates of this program are recognised as trade-qualified cooks and can work in establishments such as restaurants, hotels, clubs, pubs, cafés, and coffee shops. 

Articulation

Upon completion, graduates can continue their studies into higher-level hospitality qualifications such as: 

 

  • SIT40521 Certificate IV in Kitchen Management 
  • SIT50422 Diploma of Hospitality Management 
  • Other qualifications within the SIT Tourism, Travel, and Hospitality Training Package. 
Study Materials

All required study resources are provided by ACTB. Students will have access to kitchen facilities, recipe guides, unit workbooks, and digital learning tools. Trainers incorporate practical demonstrations and real-world kitchen practices to ensure strong industry relevance.

Training & Assessment Methods

The program is delivered face-to-face at ACTB’s Brisbane training locations: 

 

  • Classroom: 100 Brunswick Street, Fortitude Valley QLD 4006 
  • Kitchen Training Facility: 29/115 Wickham Street, Fortitude Valley QLD 4006 

 

Assessments are practical and theory-based, and may include: 

  • Written questions and projects 
  • Reports and assignments 
  • Role plays and observations 
  • Kitchen-based demonstrations 
  • Work placement tasks 
Course Details
  • Duration: 52 weeks (44 study weeks + 8 holiday weeks) 
  • Study Load: 20 classroom hours per week + approx. 5 hours of self-study 
  • Work Placement: 240 hours of mandatory industry placement 
  • Intakes: January, April, July, October 
  • Delivery Mode: Face-to-face (classroom and kitchen-based) 
Entry Requirements

There are no formal training package prerequisites. However, ACTB requires that international applicants: 

 

  • Be at least 18 years old at commencement 
  • Have completed Australian Year 12 (or equivalent) 
  • Demonstrate English proficiency: IELTS 6.0 (or equivalent, within 2 years), or completion of General English (Upper Intermediate) / EAP Upper Intermediate 
  • Successfully complete an LLN (Language, Literacy, and Numeracy) test during orientation 
Course Structure

Students must complete 25 units of competency: 20 core units and 5 electives. 

 

Core Units include (selected): 

  • SITXFSA005 Use hygienic practices for food safety 
  • SITHCCC027 Prepare dishes using basic methods of cookery 
  • SITHKOP010 Plan and cost recipes 
  • SITHCCC041 Produce cakes, pastries and breads 
  • SITHCCC043 Work effectively as a cook 

 

Elective Units include (selected): 

  • SITHCCC040 Prepare and serve cheese 
  • SITXCCS014 Provide service to customers 
  • SITHCCC038 Produce and serve food for buffets 
  • SITHCCC025 Prepare and present sandwiches 

 

These units ensure you develop the broad practical and theoretical knowledge required for success in commercial kitchens. 

Pathways & Career Opportunities

Graduates may seek employment as: 

 

  • Cook in restaurants, hotels, clubs, pubs, cafés, or coffee shops 
  • Catering assistant 
  • Apprentice chef 

 

This qualification also provides access to higher-level hospitality studies (Certificate IV or Diploma).
